  • Know when to expect peaks: some peaks are totally unexpected but others you can anticipate, e.g. New Year's Day, Valentine's Day, Mother's Day, Iftar and Christmas.  

  • Use quiet times wisely: as well as peak times, you'll have times when your business is especially quiet. These hours see less foot traffic. This gives you time to concentrate on preparations, such as cutting vegetables, making sauces, setting out breads...   

  • Optimise your stock: it's important that you have enough stock so you can serve all your customers. Purchase enough fresh products, such as meat, fish, fruit and vegetables, as well as bread, viennoiserie, patisserie, savoury snacks and sweet snacks. Ensure that everything is accessible and ready for your busy service.  

  • Reservations or orders: for predictable peak times, it's smart to use a reservation or ordering system. Then your regulars will be assured of a delicious meal and optimal service.   

  • Offer to-go meals: limited capacity at your business? Provide to-go options to generate extra sales without needing to expand or hire more staff.

Sufficient staff: all hands on deck in busy moments

In addition to serving delicious food, you also need to make sure your service and hospitality is on point at peak times. That’s why you need to hire enough staff. Make sure you have optimised your staff rosters. Utilise your staff for preparations and hire extra staff for service. Is your current staff insufficient to tackle very busy moments, such as national holidays, in a targeted and efficient way? Consider taking on extra manpower, such as students and flex workers. But remember you'll need to train them. Hire them well in advance so you can teach them the ins-and-outs of your business and approach.

Menu changes during busy times 

By creating a smaller, high-quality menu for peak times, your hospitality and customer satisfaction levels will remain optimal. Because quality should always trump quantity. Therefore, there's nothing wrong with limiting your menu in peak times. Some tips:  

  • Create a themed menu: follow the trends and offer dishes to make special days even more special. Examples:  

  • Valentine's Day: sharing dishes like an appetiser board, breakfast basket or patisserie and bread rolls in the shape of a heart.   

  • Christmas: classics like turkey, crab, surf and turf, yule logs and croquembouches (and create a unique twist by using filled mini beignets, for example).  

  • Iftar: lentil soup, chickpea salad, kue nastar, etc. The options are endless.  

  • A fixed menu: create a special menu for holidays, always offer meat, fish and veggie options. This allows you to cater to all preferences. You can also offer 3-course, 4-course and even 5-course menus.  

  • Limit the number of dishes for large groups: allow large groups of 8 people or more to choose from your menu but limit their options to 4 or 5 different dishes per table.  

  • Special range available to order in advance: does your bakery or sandwich shop offer special themed items? Allow your customers to order these products in advance. Then you know how much stock you need and can limit waste.
